Ultimate Chocolate Cake

If you, or yours, happen to be chocoholics, this is the cake for you.

Dense, rich, chocolatey, it's all there. Plus, the glaze just gives it the right touch. The birthday boy prefers his chocolate DARK...and so that was the version we made this time, dark chocolate cake mix (yes, they now make one! We used Duncan Hines) and chocolate fudge pudding mix. You can choose your cake and pudding mix flavors from the broad spectrum that the stores carry now. I couldn't believe how many "versions" of chocolate cake mixes can be found.

Without further ado...

Ultimate Chocolate Cake
(shared with me by my dear buddy and pal, Liz....she rocks!)

CAKE

Mix together for 2 minutes;

dark chocolate cake mix
small instant chocolate fudge pudding
1 C sour cream
1 C milk
1/2 C vegetable oil
1/2 C water
4 eggs

Stir in 1-2 cups semi-sweet chocolate chips

Grease bundt pan, bake 50-55 minutes @ 350 degrees

Cool 10 minutes, turn out cake, and cool thoroughly before glazing

GLAZE

2 oz semi-sweet baking chocolate
1 1/2 C powdered sugar
3 T butter
2 T water
1 tsp vanilla

Melt chocolate & butter in 30 second intervals in the microwave until smooth. Cool slightly. Add powdered sugar alternately with water, stir. Add vanilla. Pour over cake.

Note: Mine seemed really thick, and I ended up adding 1/4 cup LESS powdered sugar, and 1 T MORE water....and it was fine. Do what you need to get the consistancy right... Mine still ended up needing to be spread down the sides, but it tasted AWESOME!


Here's the finished product! These girls could NOT wait...we had a few fingerprints in the glaze...


Before the glaze went on. Can you SEE those chocolate chips? Melty.

The batter was thick, just like a pudding and baked up so moist.

Yeah, it was even good BEFORE we cooked it.

Oh, and I have it on good authority that this cake is EVEN BETTER the next day!

  1. curse you for posting this recipe on a Saturday Night-when I have like ZERO of the ingredients to make it and ZERO energy to go to the store tonight! I'll be craving chocolate cake ALL weekend.

    It looks FAB, and I love that you let the kids lick the bowl.

    As I read through I was thinking WHY couldn't I have KNOWN this recipe 3 hours ago when I was at Walmart?!? My other thought was that I know what I'll be making to celebrate Meg's birthday next month...thanks for sharing!

  5. Sorry K. I should've told you on FB when you requested the recipe to make sure you had cake mix, pudding mix and sour cream on hand... I had to go out for the pudding mix b/c I don't always keep it on hand. But hey, you can make it on Monday! "Tomorrow, tomorrow, there's always tomorrow! It's only a day away!"
