"Eat A Mommy"

A few years ago I heard all kinds of buzz about soybeans and how great for your heart they were. I felt like it would be a great veggie to add to our diets. So, I went to my local grocery store and picked up a frozen bag of shelled edamame. Full of gusto, I prepared them with my next meal...along with some chicken breast and brown rice. I was feeling really healthy. As I sat down and began to eat, ewwww, they were so gross! Yucky texture and kind of a fishy aftertaste...I couldn't stomach them....and could hardly expect my kids to.

Over the next few years I heard things here and there about the benefits of having this superfood in your diet and thought, "yeah, I tried, I REALLY TRIED, but I can't eat that stuff."

So, when my friend Maren mentioned to me that Costco carries portioned microwave ready Edamame, that her KIDS love, I scoffed. She is a healthy rockstar of a Mom who seems to know what tastes good though, as evidenced by the oreo truffles she created and shared at our recent neighborhood Bake-Off! Turns out I happened upon said product last time I was there and thought, well the return policy here is awesome...I'll give it another try.

I'm so glad I did! This stuff comes in the shell (helps maintain a nice texture), in a microwave safe container. All you have to do is stab a hole in the top, nuke it for 3 minutes, a little salt on top, and YUM! They taste nutty and my kids think they're like lima beans. They love to pull the edamame from the shells (that part is inedible). They ate a ton! And now I have another veggie to add to Gunnar's list that he'll actually eat. :) If you live near a Costco check it out in the freezer section.

  1. Most soy is nasty, I agree. I'll have to try one package and see if my kids will eat them... They eat ALL veggies, even lima beans and broccoli and cauliflower, so if they are the least bit edible, I think they'll fly. Mia eats raw snow peas and they look similar, so I think she'll try it -- she's my visual kid. If it looks yuck, she won't touch. Sometimes I feel bad about not doing soy cheese, soy milk, soy ice cream when dairy isn't all it's cracked up to be, but it's just gross!

  2. I've tried flavored soy milk too and I can't stomach it. Mom seems to like it, though she says only certain brands are good. I think she likes 9th Continent.

  3. I heard the buzz about these too so I bought a pack at costco two years ago. I hated them and so did my kids. I hate chinese food or anything asian flavored so that might have made it worse. I gave them away. Maybe this where they are microwaved would help but I am not sure I am willing to take a risk. LOL!

  4. We happened to sample the "yuka beans"(as they are commonly called in our house) at Costco yesterday and my kids loved them. I however, wasn't quite brave enough to buy them...maybe next time.

  5. Mark will use chocolate soy milk on his cereal from time to time if he asks me to buy it. I think we'll all live a long time. Just take your omegas and linoleic acids and exercise. Limit red meat and refined foods and I think your heart will be fine. :-)

  6. Oh I LOVE the microwavable edemame! Put coarse salt on anything that you can nuke and eat in 2 minutes, and I'm all over it! So good! We had one of those huge packages in the freezer forever and would make a batch to eat while we watched movies instead of popcorn. Yum!

  7. and I agree. Most soy=totally nasty. Kasey swears by lowfat soy eggnog, but I haven't tried it yet. It just isn't eggnog if it's not like 1000 calories a glass, is it?
